Cook five classic Balinese dishes in a family compound after a morning market walk — the best way to understand the cuisine.
The day
This is the cooking class you bring home with you. You'll start at a local market where Made and a family cook walk you through ingredients you've probably never seen (salam leaves, kemiri nuts, kencur root), then head to a traditional family compound just outside Ubud. Over the next three hours you'll prepare five dishes — typically sate lilit, base gede curry paste, gado-gado, sayur urab, and black rice pudding — using the open-flame kitchen and hand-pounded spices. You eat what you cook, family-style, on the floor of the family's pavilion. You leave with a printed recipe card and a very full stomach.
